Ingredients:-
4 tbsp olive oil
400gm cubed beef
1 onion finely chopped
4 garlic chopped
1 400g can of chopped tomatoes
1 green pepper chopped
1 red pepper chopped
1 chilli chopped
½ tsp cayenne
1 tsp cumin
1 tsp oregano
14 oz cooked red kidney beans
3 1⁄3 fl oz chicken stock
sour cream for garnish
a few coriander springs
salt and pepper
Directions:-
- Heat oil in a pan and saute onions, garlic till soft.
- Add in beef bell peppers, chilli, cayenne, cumin, oregano.
- Once the beef is cooked add the chicken stock
- Season with pepper and salt.
- Just boil it.
- Then place it into the centre of the preheated oven for 1 hr and stir occasionally.
- Add the beans after one hr and cook for another 10min.
- Serve hot with a dollop of sour cream.
- Done.
