Mac and cheese






Ingredients:-


Macaroni-8 to 16 ounce depending on the cheesiness you desire
Water to cook pasta with salt
Olive oil-1tblspn
Butter/Margarine-4tblspn
All purpose flour-1cup
Cayenne pepper-1tblspn
White/black pepper-1tblspn
Thyme-1tblspn
Milk-4cup
Nutmeg-half tspn
Worcestershire sauce-1tblspn
Salt to taste
Sharp cheddar cheese-3+1cups
Bread crumbs( Panko Japanese crumbs preferred)


Directions:-
  • Cook pasta in double its amount of water(1cup pasta=2cups water). Add salt to water while cooking.
  • Drain the remaining water and move the macaroni into the baking dish.
  • Now let us cook the sauce.
  • Pour in olive oil to a large deep bottomed pan at medium heat and melt butter in it.
  • Add flour and mix it with butter to a paste.
  • Add thyme, cayenne, pepper and cook that for 1min
  • Pour in a couple cups of cold milk (cold milk to reduce lumps) and give a stir.
  • Add the remaining milk.
  • Add nutmeg.
  • Add Worcestershire sauce and salt to taste;stir and simmer for 8 to 10 min.
  • This liquid mixture thicken up.
  • At this stage add the cheddar cheese and melt it to form a thick and creamy cheesy sauce.
  • Pour this over the cooked macaroni in baking dish and mix it well.
  • The final step is to butter some bread crumbs and spread it over the macaroni and cheese.
  • Bake this for 20 min at 400 degree Fahrenheit. When you get an amber caramelized top it is done.
  • Serve hot or cold.
