Pineapple Pachadi/ Kerala curry

This is something new which i never knew until i got married. This is a kind of sweet curry with the tempting flavor of fresh yellow pineapple.Pineapple is a tropical fruit  and was discovered by Europeans on Caribbean Islands.

Health benefits- Some claim this is good as a pain reliever and good for digestive systems. Some also claim that it induces childbirth when baby is overdue.

Ingredients:-( Serves 2)

Pineapple- 10-12 cubed pieces.
Oil-1tblspn
Mustard seeds-half tspn
Red chilli-1
Green chilli-3 medium sized
Coconut- 5tblspn
Cumin seeds- 1/4 tspn( 2 pinches)
Shallots-2
Ginger- 1 inch piece
Mustard seeds- half tspn
Yogurt-5 tblspn
Turmeric-half tspn
Curry leaves-5 leaves
Water as needed

Directions:-
  • Bring a vessel one the top of a medium flamed stove.
  • Add oil and splutter mustard seeds. Add red chilli.
  • Add pineapple and green chilli with little water (8 tblspns water) and cook with lid on at a medium flame. (for say 10 min or more till the cubes turn tender. Add water if required)
  • Meanwhile take coconut, cumin, mustard seeds, yogurt, shallots, ginger in a blender.Do not grind now.
  • When the pineapple is well cooked take 2 pieces of pineapple into this blender and now grind all the ingredients into a smooth paste. These pineapple pieces gives a sweetness to the curry
