NY cherry cheese cake

Hello friends my name is Pinkie Pie. My cutie mark is PHILADELPHIA CHEESECAKE.!!


Throwing parties to my friends is what i love to do!
I try to catch butterflies to take to party i'm having today.
I'm so excited!!!:)
Margarita and myself went to get the pinwheels for my guest.
Before my guests arrive, there is one last thing to do...


MY favorite part of all... to BAKE MY CHEESECAKE!!!!

What a great way to end a fun filled day!!!


Requisites:-


Philadelphia Cream cheese-16 oz(2cups)or 2 packets
Sugar-1/2cup
Vanilla-1 tspn
AP flour- 1 tblspn
Sour cream-1/4cup


2eggs


Oreo biscuits or any sweet biscuit-10
Melted Butter or margarine-1tblspn


Canned Cherries


Directions:-

  • Blend in all the first set of ingredients using an electric mixer or a blender. Then add the eggs one by one. And blend well again in the blender or using mixer. You can also use a whisk to do this but make sure that you do not have any lumps remaining. And you can burn out some calories before eating the cheese cake while whisking :)!!!
  • Now take the biscuits in a ziploc and crush them using a rolling pin by pressing and rolling over the cover. Form tiny crumbs. Mix these crumbs with melted butter.
  • Take the 8x1 1/2 inch tin and line it with an aluminium foil or a baking sheet. Grease it with butter.
  • Now layer the bottom of the cake with the crumbs. Spread them evenly and press. This forms the crust of your Philadelphia cheese cake. Now blank in the previously prepared cake batter on top.
  • Preheat the oven at 300 F and bake for 40min.
  • Take out and let it cool. Then refrigerate it at least for 4hrs.
  • Now serve topped with cherries..

Pineapple upside down cake



How many bumps are there in a pineapple?  Have you ever looked it? Even i dint..!!
This cake is all about its sunrising color and the taste. Do not think that this is gonna be a flop. I thought twice before making this if it would be good or not. But to be frank the base of this cake is superb. And that doesn't mean that top is behind ...                                                                                     Pineapple health facts


Requisites:-


Pineapple cut in circles-5 pieces
Butter-1 tblspn
Sugar (Brown preferred)- 2 tblspn(included to grease the pan)
Cherries-11


For cake batter:


AP flour-1 cup
Sugar-3/4 cup
Baking powder-1tspn
Baking soda-1/4tspn
Salt-1 pinch
Egg-1
Butter- 3tblspn
Sour cream-3tblspn or milk-1/4cup
Pineapple juice-1/2cup or fresh circular slices-2


Baking tin required- circular-8x 11/2 inch or similiar like 9x1 1/2 inch


Directions:-


  •  Butter the pan and heat over the stove top.  Add the sugar and place the circular pineapple slices over it  and cook for 20min. Leave it unattended at medium flame. 
  • Now you can prepare the batter by giving a blitz to all the ingredients in a blender.
  • Before pouring the batter into the cooked pineapple fill the circular gaps with the cherries. Now pour the batter above this.
  • Preheat the oven at 400 F or 200 degree C and bake this for 30min.
  • Leave it to cool before putting the pineapple cake upside down.

Holiday hot cake.




A very exclusive and outrageous pudding with mouthwatering sauce indulged in it totally dilutes our thoughts with childhood memories. The vacations we always waited for..... I can say i knew cooking from my age of eight. Me, my sister and mom had made a small hut with plaited coconut leaves next to my house and had a mat to lie down and welcome my guests. And i was always fond of the little three stoned chimney stove on the corner. I cooked rice on it and tomato curry. And yeah.. i remember we had a housewarming for the small Hut Toy and my mom made payasam. Who wouldn't have such beautiful memories when they go to their past.
So holiday hot cake is all that you can make for your kids when they are back from school and would be a surprise when they savor it, with a different flavor of spices and dark/Light brown sugar.




Requisites:-


Flour-1cup
Light/dark brown Sugar-3/4 cup
Milk-1/2 cup
Oil-1/4 cup
Egg-1
Baking powder-1tspn
Ginger pwdr-1tspn
All spice pwdr-1tspn


For sauce:
Boiling water-4cups
Brown sugar- 1 1/2cup
Spices again 1spoon each
Butter-6tspn


For topping:
Whipping cream
Eggnog


Directions:-

  • Preheat the oven at 220 degree C/440F.
  • Mix in the first set of ingredients and make a cake batter relatively thick.
  • Grease the cake mold with butter and pour this cake mix into the mold.
  • Now clatter the 1 1/2 cup of sugar on the top this batter. Sprinkle the spices through out over this sugar.
  • Dot the surface with each spoon of butter on six different positions.
  • Pour in the boiling water very slowly and carefully over this mixture.
  • Bake for 30 min.
  • Done. You would get the cake floating over the sauce. Serve after 10-15min.
  • Top with whipped cream. Whip the cream with a whisk or electric mixer to form soft peaks. Add eggnog while whipping.

Old-fashioned chocolate layered cake




Old is gold. And this old fashioned chocolate cake would indulge in your blood in a dangerous manner that you too would turn chocoholic like me. But you will never repent because, who in this world wouldn't dream of overwhelming in a ravishing pool of chocolate. Mmmm.. i am salivating. I am sure you too is. I am breaking all the laws of lean diet and fat free diet, but enjoying the taste of chocolate with you, for you.


Ingredients:-


For cake batter:-


Dry ingredients:
Plain AP flour-1cup
Sugar-3/4cup
Baking Powder-1tspn
Baking soda-1/2tspn
Cocoa powder-2heaped tablespoon(1/4cup)


Wet ingredients:
Egg-2
Vanilla essence-2tspn
Sour cream-1cup
Butter-3heaped tablespn(at room temperature)


For frosting:-


Semisweet chocolate chips-6oz
Butter-2tablespn
Sour cream3 tablespn
Vanilla essence-1tspn
Icing Sugar-1 cup
Golden syrup-2drips




Directions:-


  • Sieve all the dry ingredients through a sieve to remove the lumps.
  • Put all the wet ingredients in the mixer to form a liquid base.
  • Add all the dry ingredients into the wet ingredients in the mixer and give a blitz to form a batter.
  • Take two 9'11/2(or around the same size pan) inch pans and butter them and dust with cocoa-flour mixture.(prepare a cocoa- flour mixture with 1:2 ratio to prevent the cake sticking from the pan while removing after baking. The brown color of this mixture will help to retain the cake color).
  • Pour the batter into pans and bake.
  • Preheat the oven at 350F and bake for 30min.
  • Cake base ready.
Meanwhile frosting:-
  • Using a double broiler melt the chocolate chips with butter.
  • When fully melted take off from the flame and add in the sour cream and vanilla.
  • Blend everything with a spoon.
  • Add in the icing sugar to this chocolate mixture to give a blitz.  Blend well in the blender.
  • Keep aside.
  • Now after 30 min stick in a knife and see if the cake is done.
  • Stop baking and remove the 1st cake out of the pan and place over a cake stand.
  • Now smudge 1/3rd of the frosting over the cake clattered, not necessarily evenly and not till the edge.
  • Take the second cake and place over 1st and this will smudge the frosting to the edges.
  • Now smudge the another 1/3rd frosting on the top. Need not be perfect. Since we  are dealing with homemade recipes.
  • And finally one third over the sides.
  • Adorn the top with flowers or strawberries.
  • DONE:)

Angel food cake with whipped frosting




I am gonna kill those people who skip trying this recipe. You know what, I run my eyes through all the cakes in the bake shelf every week when i do my shopping. I am a cake lover and love them with whipped frosting. I have noticed this Angel food cake many times. But never felt like trying them because they  found bare-frosting. So I thought of trying them in my home and make my own frosting.


Ingredients:-


Cake mix:
Egg whites of 2
Plain flour-half a cup
Sugar-1/2cup
Lemon juice of half a lemon
Vanilla extract-1tspn


Frosting:
Heavy whipping cream-half cup
Confectioners sugar-half cup or less
Blueberries


Directions:-


  • Whip the egg whites till they form stiff peaks use a whisk or an electric mixer.
  • Add in sugar little by little to enhance the whipping process.
  • Add vanilla and lemon juice finally. And give a blitz with the electric blender once more.
  • Now sieve the flour using a sieve slowly, little by little and fold into the whipped egg whites gently.
 'Do not rush to add in the entire flour at a time and do not harshly fold them.'


  • Now the batter for cake is ready. 
  • Butter the cake mold.
  • Blank them into a cake mold and bake at 325F for 25 min.
  • Now see if they are properly cooked by inserting a stick into the cake. If it comes out clean, without any uncooked batter on it, it is done.
  • Let the cake cool.
  • Now take an offset spatula or any flat spatula to spread the frosting over them.
  • Adorn with blueberries.

APPLE CRUMBLE

Preparation time 1hr and serves 4.


You will need

·         4Apples
·         9 tbspn white sugar(can reduce)
·         18 tbspn plain white flour
·         4 1⁄3 oz butter(8 to 9 tbspn) at room temperature
·         1 clove or cinnamon stick


Preparation: 


1.     Dice the apples into small chunks.
2.     Cook the apples covered for half an hr with 6 spoons of sugar and the the cinnamon stick or clove. Do not burn it. Mash it after cooking without forming a puree. Let it cool in a baking tray.

 3.     Make the crumble.Mix the white flour, remaining sugar and the butter with your fingers in a bowl until it becomes like a breadcrumb consistency. The butter should be kept at room temperature before doing this so that it easily blends with the flour and wets all part.

         4.     Cover the stewed apples with the crumble topping, without pressing down.




         5.     Preheat the oven. Set the temperature of the oven to 150ºC (300ºF/ gas mark 2).

         6.     Cook the apple crumble


                  Bake for approximately 30 minutes or until the crumble and is golden brown and  
       crunchy

           Serve

Spoon a helping of apple crumble into a dish and serve with cream or ice cream.

FRUIT CAKE



"Sweet" is a rare gift god gave us to sense and to arrest all our minds. We all love anything sweet -song, food, person, dress, house etc etc.  What sweet can we fetch out from our kitchen shelves to the food lovers?? And that too homemade?? And that too healthy?..... Here comes an easy. yummy fruit cake recipe!!
Dates are too sweet that diabetics does not make them too edible. But they are contraindicated for iron-richness  and fiber. It is always good to have a small idea or knowledge of the nutritional values of what we eat. For more click here.

Ingredients :-

1.     Maida/ all purpose flour- 2 cups
Sugar-2 cups
Baking soda- 1tspn
Nutmeg powdered- ¼ tspn
Salt-1/2 tspn
2.     Oil-1cup
Eggs-3 or 2
Vanilla essence- 1tspn
Caramel
3.     Dry fruits
Raisins half cup
Dates chopped to the size of raisins  half cup
Can add nuts or other dry fruits. Dry fruits must be soaked in brandy or wine or whisky for one hr.

Directions :-


1.Mix all the dry ingredients in 1.
2.Beat egg and add oil and vanilla (wet mixture)
3.Add the dry mixture into the wet mixture. And give a thorough swirl to form a batter.
4.Add dry fruits into the resulted batter(which is not too thick to form a dough or not too loose to form a batter).  Pour this into an oven proof cake mold. The batter should fill only half of the pan, because since the cake rises it has a chance to brim over.
5.Bake at 400 degree F  for  40 min or more until cooked. Insert a knife into the center most part of the cake and take it out. If it comes out clean, the cake is well cooked.
